Meet Cliff Reeves

After stepping into retirement, I wanted a craft that required patience, focus, precision, and a steady hand. Knife sharpening quickly became that craft.

There is a quiet satisfaction in taking a dull, frustrating kitchen knife and turning it back into a tool that slices cleanly, feels controlled, and makes cooking more enjoyable.

My background includes more than three decades in laboratory medicine and regulatory compliance. That career taught me to value process, documentation, consistency, safety, and careful attention to detail. Those habits carry directly into how I approach sharpening.

Why that matters

Sharpening is not just “make it sharp.” Each knife has its own steel, geometry, condition, edge history, and intended use. I evaluate those details before deciding how much work the knife needs.

How I Approach Sharpening

Preserve the Knife

Sharpening removes steel, so I aim to remove only what is needed to restore a clean, useful edge.

Match the Knife

A heavy Western chef knife, thin Japanese gyuto, paring knife, and utility blade should not all be treated the same.

Sharpen for Real Use

The goal is a practical working edge that fits how the knife will actually be used in the kitchen.

Life Beyond the Bench

When I am not working on knives, I am usually staying active, learning something new, or enjoying the roads around Tennessee. I am a runner and cyclist, and I am also a beginner guitar player.

Sharpening fits that same mindset: learn the skill, practice the details, respect the process, and keep improving.

My commitment

Whether you bring an everyday kitchen workhorse or a favorite chef knife, I treat it with the same care, patience, and attention to detail I would want for my own tools.
